A cellar door for Brown Brothers at Tamar Ridge, in the Tamar Valley — a hospitality fit-out where the building has to do two jobs at once: hold a crowd, and disappear behind the view.

The brief

A cellar door is a working restaurant and a shopfront for the wine at the same time. Polished concrete underfoot, a suspended flue over an open fire, a long communal table, banquette seating, and a glazed wall the length of the room so the valley does the decorating. Every finish has to survive commercial traffic and still read as somewhere you would linger.

The constraint

Commercial hospitality runs to a date, not to a preference. An opening is booked, staff are hired and stock is ordered against it, so the program is fixed before the first trade arrives — and the budget is fixed with it. That is a different discipline to a private home, and it is the part our client singled out afterwards: “tight budgets and timelines.”

How a fixed date gets met

Commercial work is a sequencing problem before it is a building problem. When the opening date cannot move, the program has to be built backwards from it — long-lead items ordered before they look urgent, trades booked against a schedule rather than squeezed in, and the decisions that hold everything up made while they are still cheap to make.

The other half is money. An open-book price means the client can see every line as it lands, so a variation is a conversation on the day rather than an argument at the end. On a project running to a fixed budget and a fixed date, that is the difference between adjusting and overrunning.
